Devorah's Traditional Hamantash Recipe
4 Cups Flour
2 Sticks Margarine
2 Eggs
1 Cup Sugar
1 Tablespoon Sour Cream
1 Tablespoon Mayonnaise
1 Tablespoon Oil
1 Tablespoon Vanilla (or vanilla Sugar)
1/2 tsp Baking Soda
1 Tablespoon Vinegar
Mix the baking soda and the vinegar in a small bowl, mix together with the rest of the ingredients till it forms a dough. Roll out a handful of dough. Cut out circles and fill with filling of your choice. Shape Hamantashen. Bake at 350 for 17 minutes or until golden.
Cinnamon Bun Hamantashen
1/2 c sugar
4 1/2 tsp dry yeast
1 1/2 tsp salt
6 1/2 c flour
1 1/4 c apple juice
2 sticks margarine
3 eggs
1/2 tsp vanilla
Filling
1/2 C Brown Sugar
1 1/2 tsp cinnamon
1/4 cup margarine
Funfetti Hamantashen Dough
4 eggs
2 tsp vanilla
1 cup oil
1 1/3 cups sugar
4 tsp baking powder
5 cups flour
1 cup sprinkles
Cheesecake Filling
1 8 oz package of cream cheese
1/3 cup sugar
1 tsp vanilla
Pecan Pie Hamantashen
2 1/2 cups flour
Pinch salt
2 Tbsp Sugar
2 Sticks Margarine
2 egg yolks
3-4 Tbsp ice water
For the crust: In the bowl of a food processor, combine the flour, salt and sugar. Cut the frozen butter or margarine into cubes and spread over the flour mixture. Pulse a couple of times until there are no longer clumps of butter, and the mixture resembles coarse breadcrumbs.
Add the egg yolks and three tablespoons of ice water, and pulse until the mixture comes together as a dough. If the dough appears too dry, add up to 1 additional tablespoon of ice water. Do not over-work the dough or the texture will get messed up.
Filling
2 eggs
1/2 cup sugar
3/4 cup light corn syrup
2 Tablespoons margarine
1 1/2 tsp vanilla
2 cups chopped pecans
1 egg white for assembling
Chocolate Hamantashen Dough (overtime cook)
12 oz melted chocolate, slightly cooled
4 sticks margarine
2 cups sugar
2 cups brown sugar
4 eggs
4 tsp vanilla extract
2 tsp baking soda
2 tsp baking powder
1 1/2 cup cocoa powder
5 cups flour
1. Melt the chocolate (preferably double boiler style) and set aside to cool slightly while starting the dough. 2. In the bowl of an electric mixer, beat together the margarine and sugars on a medium speed, until creamy. 3. Add the eggs, vanilla, baking soda, baking powder and melted chocolate and beat until combined. 4. Turn the mixer to low, and add the cocoa powder and flour, slowly, and mix until just combined. The texture will be of a stiff dough
Red Velvet Hamantash
1 1/2 Cups Sugar
2 Sticks butter, room temp
2 eggs whisked
1/4 cup orange juice
1 tsp vanilla
4 cups flour, sifted
2 Tbsp cocoa powder
2 tsp baking powder
1/2 tsp salt
4 tsp red food coloring
Filling:
1 8 oz block cream cheese
21/2 cups powdered sugar
1/2 tsp vanilla
Fluffernutter Hamantaschen
1 cup oil
2 cups peanut butter
1/2 cup light corn syrup
1 1/2 cup sugar
2 cups light brown sugar
2 tsp baking powder
2 tsp vanilla
4 eggs
4 2/3 cups flour
Filling
1 cup peanut butter
1 cup marshmallow fluff
Gluten Free Hamantashen
2 eggs
3/4 cup oil
1/4 cup orange juice (better a drop less than more)
2 tsp vanilla
3/4 cup sugar
1/4 Cup Brown Sugar
3 3/4 Cup Red Mill 1 to 1 baking flour (or gluten free mix with xanthem gum)
2 tsp baking powder
Beat the wet ingredients together
Mix in the sugar
Mix in the flour and baking powder
Refrigerate overnight or for at least 8 hours
Bake at 350 for 15 -17 minutes
